This is a very common and popular dish you can see in many places in Vietnam. The preparation is simple, too.
Ingredients:
400 gms of very fresh raw whole shrimp
1 tablespoon of sugar
½ teaspoon of salt
2 stalks of chopped leek
1 tablespoon vegetable oil
half of a lemon
Preparation:
Pink shrimp is preferred for this special fried shrimp dish. But the gourmets prefer a rounded shrimp species call “tôm bầu” for it tastes better and with firm meat.
Heat the oil well. Put in the chopped leek of the lower part of the stalk (pseudostem) and fry until it turns yellow. Put in the shrimp and fry in about 5 minutes. Put in the sugar, stir well until no liquid left in the pan bottom. Add chop leek (leaves) and pepper.
Serve with the lemon juice queezed directly on the shrimp in the disk before use.
Remarks: Stir the shrimp well on high heat so that shrimp meat does not dry out.
